4/26/2023 0 Comments Animal age and meat tendernessIn order to obtain different textures, two main strategies were used: (a) aging type (wet and dry aging with or without starters) and (b) aging times (0, 7, 13, 21, and 27 days). Therefore, the present research aimed to create a model that can classify beef samples from longissimus thoracis muscle according to their tenderness degree based on hyperspectral imaging (HSI). Nowadays, the meat industry requires non-destructive, sustainable, and rapid methods that can provide objective and accurate quality assessment with little human intervention. We therefore propose a simplified one-step adipogenic protocol, which, given the replacement of rosiglitazone by a food-compatible PPARĪ³ agonist, is suitable for cultivated fat. This was demonstrated in both media types and in four species: ruminant and monogastric. Importantly, this protocol leads to mature adipocytes in 3D, edible hydrogels. Two glucocorticoid receptor activators, progesterone and hydrocortisone, found in DMAD and FBS, affect differentiation homogeneity, without playing an essential role in activating adipogenic genes. Here, we show that of the four inducers, only insulin and rosiglitazone are necessary in both serum-free (DMAD) and serum-containing media, with DMAD outperforming FBS. The traditional adipogenic cocktail containing IBMX, dexamethasone, insulin and rosiglitazone is not food-compatible. Fat plays a key role in the meat flavour, therefore development of suitable adipogenic protocols for livestock is essential. Cultivated meat is a promising technology with the potential to mitigate the ethical and environmental problems associated with traditional meat.
